Brewer's notes:

A few years back my family and I spent some time in Ireland. We visited the Guinness brewery of course, but we also stopped by some smaller, village breweries and pubs and each one of them had their own spin on the classic Irish Stout. There's so much more to this style than just Guinness.

Inspired by those beers, I set about to make my idealized Irish Stout. I tweaked this recipe over many iterations at home until I landed here. This is a complex, malty beer whose aroma and flavor has loads of chocolate and coffee a and even a little bit of fruit. It's full bodied and chewy but only 4.5% alcohol.

It's also a very versatile recipe so expect to see some variations in the future that use Steel Beam as a starting point.

Slainte!
