I let a barrel of Untold Depths sit longer than I normally would to get as strong of a barrel character as possible. After 2 years, the beer was plenty barrel-y. The purist in me would have stopped there (and perhaps we did pull off a little at that point and tuck it away), but I have committed to stepping out of my comfort zone with some more eclectic beers. Austin and I discussed what to add to this beast and we quickly agreed on banana and maple (no I can't tell you why we jumped right to that).
So I cleared out my frozen banana collection, plus some, and start pouring in maple syrup (it always takes more than you think) and packaged it up. We were going to name it 'Untold Bananas' which we both found hilarious, but a beer like that should bonk you over the head with bananas. This is more of a balanced breakfast.
