Brewer's Notes
Two of our most popular beers last year was Fast Peach - a beer somewhere between an American Pale Ale and a Vienna Lager (with a shitload of peaches), and Bathed in Light - a Witbier with lemon thyme and ginger. So, for this spring, I decided to essentially combine the two to see what would happen!
This time, I called on an assist from a homebrewer friend of mine, Nate Van Wert - who, besides from having a great name for a brewer, is an expert at making Witbiers. Using Allagash White as his guiding beacon, this guy has made some of the best Witbiers I've ever tasted. Beyond providing technical guidance, he suggested we ferment some of the peaches, which is a frist for me. I think it really helped deepen the peach flavor and complexity.
